Zucchini with egg – tastes better than meat! Zucchini sticks – awesome, sooo delicious!

For: 2-4 people

Ingredients:

2 medium-sized zucchini 🥒

2 eggs 🥚

50 g grated Parmesan cheese 🧀

50 g breadcrumbs 🍞

1 tsp paprika powder 🌶️

1 tsp garlic powder 🧄

Salt & pepper to taste 🧂

A little olive oil for frying 🫒

Fresh herbs like parsley or basil 🌿 (optional)

Preparation:

Prepare the zucchini: Wash the zucchini and cut it into even sticks (about 1-2 cm thick).

Prepare the breading: Mix the breadcrumbs with the grated Parmesan cheese, paprika powder, garlic powder, salt and pepper in a shallow bowl.

Prepare the egg: Crack the eggs into another bowl and mix them well.

Bread the zucchini: Dip the zucchini sticks first in the egg, then in the breadcrumb mixture, and turn until evenly coated.

Fry: Heat some olive oil in a pan over medium heat. Fry the zucchini sticks in batches for about 2-3 minutes per side, until golden brown and crispy.

Drain: Place the finished zucchini sticks on a paper towel to allow excess oil to drain off.

Serving: Optionally, sprinkle the zucchini sticks with fresh herbs and serve them hot as a snack or as a side dish with a dip of your choice (e.g. yogurt dip or tomato salsa).
