Zucchini, Salmon and Potato Salad

NOTE

  1. First of all, let’s boil the potatoes, it will take about 25/30 minutes;
  2. Before removing them from the water, we test them with a fork: if it enters the pulp without difficulty, they are ready;
  3. So we drain them, let them cool, peel them, cut them into not-so-small pieces and place them in a bowl;
  4. After that we wash the courgettes thoroughly, dry them, trim the ends and slice them thinly using a mandolin;
  5. We place them in a bowl, add a pinch of salt and let them rest for about ten minutes;
  6. Now let’s assemble our salad;
  7. Pour the potatoes (which we boiled and cut into cubes), the courgettes (which we squeezed delicately to eliminate the excess liquid) and the salmon cut into strips into a bowl;
  8. Add salt, a good drizzle of extra virgin olive oil, peppercorns, lemon juice and mix to combine everything well;
  9. We transfer to a nice serving tray;
  10. Our fabulous salad is ready, we can serve it immediately and enjoy it;
  11. Much better if we let it rest for an hour in the fridge so that it becomes more flavourful and then serve it…. FABULOUS!!!
