NOTE
- First of all, let’s boil the potatoes, it will take about 25/30 minutes;
- Before removing them from the water, we test them with a fork: if it enters the pulp without difficulty, they are ready;
- So we drain them, let them cool, peel them, cut them into not-so-small pieces and place them in a bowl;
- After that we wash the courgettes thoroughly, dry them, trim the ends and slice them thinly using a mandolin;
- We place them in a bowl, add a pinch of salt and let them rest for about ten minutes;
- Now let’s assemble our salad;
- Pour the potatoes (which we boiled and cut into cubes), the courgettes (which we squeezed delicately to eliminate the excess liquid) and the salmon cut into strips into a bowl;
- Add salt, a good drizzle of extra virgin olive oil, peppercorns, lemon juice and mix to combine everything well;
- We transfer to a nice serving tray;
- Our fabulous salad is ready, we can serve it immediately and enjoy it;
- Much better if we let it rest for an hour in the fridge so that it becomes more flavourful and then serve it…. FABULOUS!!!
