Ingredients   :
1 kg of San Marzano tomatoes, white wine vinegar,
2 tablespoons of extra virgin olive oil, qb, fine salt, qb, fresh parsley,
qb, garlic, qb

Preparing sun-dried tomatoes in oil:
Step 1
: First, wash the tomatoes and dry them thoroughly. Then, halve them lengthwise and place them cut-side up on a baking sheet lined with parchment paper. Season with a little extra virgin olive oil and a pinch of salt and bake in the oven at 120°C for about 10 hours.

Step 2:
You’ll know the tomatoes are ready when they’ve lost all their vegetative water and the skin appears slightly wrinkled: Place them in a glass container or on a wire rack and let them cool completely.

Step 3
: In the meantime, fill a pot with plenty of water, add the vinegar and bring to a boil.

Step 4
: Then add the sun-dried tomatoes and blanch for 4 to 5 minutes. After the time has elapsed, drain and dry thoroughly with a clean cloth.
