I seasoned and cooked the chick peas separately then just built the pepper by layers.
Chopped Avocado, Tomatoes, Red Onions, and Cilantro. Season with a squeeze of lemon or lime, small amount of olive oil, dash of sea salt and pepper.

Once everything was prepped, I washed and cut my peppers added the quinoa first, “meat” second, Chickpeas 3rd
Bake for 25-30 mins at 35 0 to keep a nice bite to your pepper. Once done baking top with avocado salsa, dressing and parsley
