Spicy Cajun Pasta with Jumbo Shrimp

Directions:

Cook the pasta according to package instructions. Drain and set aside.
In a large skillet, add the jumbo shrimp and cook until pink and opaque, about 2-3 minutes per side. Remove the shrimp from the skillet and set aside.
Add the sliced red and green bell peppers, chopped onion, and minced garlic to the skillet. Cook until the vegetables are tender, about 5 minutes.
Pour in the heavy cream and chicken broth. Stir in the diced tomatoes, Cajun seasoning, smoked paprika, and cayenne pepper (if using). Bring to a simmer and cook for 5-7 minutes, allowing the sauce to thicken slightly.
Return the cooked shrimp to the skillet. Stir to combine and cook for an additional 2-3 minutes, until heated through. Season with salt and pepper to taste.
Add the cooked pasta to the skillet and toss to coat in the sauce.
Serve the Cajun pasta hot, garnished with grated Parmesan cheese and fresh parsley.
