👩🍳 Instructions
1. Preheat Oven:
Preheat to 375°F (190°C).
Butter the bottom of a baking dish (about 13″ x 9″ x 4″ deep).
2. Season & Bake Chicken:
Season chicken breasts on both sides with salt, lemon pepper, and paprika.
Place flat-side down in greased baking dish.
Bake uncovered for 15–20 minutes.
3. Prepare Creamed Spinach:
In a skillet, heat 1 tbsp vegetable oil over medium heat.
Add spinach, cover, and cook for 1–2 minutes until wilted.
Remove from heat, add garlic and half and half.
Bring to boil, then stir in mozzarella cheese on high heat until melted (30 seconds).
Reduce heat and stir until smooth and creamy (about 1 more minute).
Season with salt to taste. Remove from heat.
4. Cook Mushrooms:
In a separate pan, heat 1 tbsp vegetable oil.
Add mushrooms and cook over medium-high heat for 1–2 minutes until caramelized.
Do not salt the mushrooms.
5. Assemble & Finish:
Remove baked chicken from the oven.
Top each piece with creamed spinach, bacon, mushrooms, and a slice of cheese.
Return to oven and bake uncovered for 15–20 more minutes, or until chicken is fully cooked and juices run clear.
Optional: Broil for 2–4 minutes to brown the cheese—watch closely to avoid burning.
