Instructions:
1. Prepare the Chicken
Place the chicken in the bottom of your slow cooker.
2. Make the Marinade
In a small bowl, whisk together lime juice, chicken broth, minced garlic, cumin, and red pepper flakes (if using).
3. Season and Add
Sprinkle salt and pepper over the chicken. Pour the marinade over the top.
4. Add Cilantro
Scatter the chopped cilantro over the chicken.
5. Cook
Cover and cook:
On low for 5–6 hours
Or on high for 2–3 hours
Cook until the chicken is tender and easily shredded.
6. Shred the Chicken
Using two forks, shred the chicken directly in the slow cooker and stir it into the juices.
7. Serve and Garnish
Top with fresh cilantro and serve with lime wedges on the side.
