Slow Cooker Beef Bourguignon

Step 1: In a large skillet, cook the chopped bacon over medium-high heat until crisp. Transfer bacon to the slow cooker.

Step 2: Season beef cubes with salt and pepper. In the same skillet, sear the beef for 2–3 minutes per side until browned. Transfer to the slow cooker.

Step 3: Deglaze the skillet with red wine, scraping up all the browned bits. Simmer slightly, then add chicken broth, tomato sauce, and soy sauce. Gradually whisk in the flour until smooth.

Step 4: Pour the sauce mixture into the slow cooker over the beef and bacon.

Step 5: Add garlic, thyme, carrots, potatoes, and mushrooms. Stir to combine.

Step 6: Cover and cook:

On low for 8–10 hours, or

On high for 6 hours, until the beef is fork-tender.

Step 7: Garnish with freshly chopped parsley and serve.
Optional: Pair with mashed potatoes or crusty bread.
