How to grill sardines properly
If you want to prepare Sardinhas assadas at home, you don’t need much:
Ingredients (for 4 people):
- 8–12 fresh sardines
- Coarse sea salt
- 800 g small potatoes
- 2 bell peppers
- 1 head of green lettuce
- 1–2 tomatoes, 1 carrot, olive oil, wine vinegar, lemon slices
Preparation:
- Prepare the sardines: Buy fresh and leave them uncleaned. Rub the outside thoroughly with coarse sea salt and let them rest for 20 minutes.
- Boil potatoes: Cook in salted water, then lightly press (squash) and fry in a pan with olive oil and a little garlic.
- Grill peppers: Cut into strips and roast on the grill or in a pan.
- Prepare the salad: Arrange green leaf salad with tomatoes, carrot strips, and lemon wedges, and season with oil and vinegar.
- Grill sardines: Place them on a hot grill (preferably on a rack) and grill for about 3-4 minutes per side until they are nice and crispy on the outside.
Tip: Don’t grill for too long so the meat stays juicy.
