How to grill sardines properly

If you want to prepare Sardinhas assadas at home, you don’t need much:

Ingredients (for 4 people):

  • 8–12 fresh sardines
  • Coarse sea salt
  • 800 g small potatoes
  • 2 bell peppers
  • 1 head of green lettuce
  • 1–2 tomatoes, 1 carrot, olive oil, wine vinegar, lemon slices

Preparation:

  1. Prepare the sardines: Buy fresh and leave them uncleaned. Rub the outside thoroughly with coarse sea salt and let them rest for 20 minutes.
  2. Boil potatoes: Cook in salted water, then lightly press (squash) and fry in a pan with olive oil and a little garlic.
  3. Grill peppers: Cut into strips and roast on the grill or in a pan.
  4. Prepare the salad: Arrange green leaf salad with tomatoes, carrot strips, and lemon wedges, and season with oil and vinegar.
  5. Grill sardines: Place them on a hot grill (preferably on a rack) and grill for about 3-4 minutes per side until they are nice and crispy on the outside.

Tip: Don’t grill for too long so the meat stays juicy.
