For 4 people:
- 1.5 kg pork ribs (entrecosto)
- 4 garlic cloves, crushed
- 2 tbsp paprika powder (mild or hot)
- 100 ml dry white wine
- 2 tablespoons olive oil
- 2 bay leaves
- salt and black pepper
Mix everything together in a large bowl, add the ribs, and rub in well. Cover and let marinate in the refrigerator. Remove from the refrigerator in time before baking to allow the meat to reach room temperature.
Preparation in the oven
Preheat the oven to 180 degrees Celsius (top/bottom heat). Place the ribs and marinade in an ovenproof dish. If desired, add coarsely chopped onions and potato wedges to allow everything to cook together.
The baking time is approximately 75 to 90 minutes. Baste the ribs with their own juices or a little wine during the baking time. Finally, increase the temperature to 220 degrees Celsius for 10 minutes to allow the skin to crisp up nicely.
