1. Heat olive oil in a large skillet over medium heat.

2. Add the chicken cubes and cook until they’re golden brown and cooked through. Then, set aside.

3. In the same skillet, add the chopped onion, minced garlic, and diced red bell pepper. Cook until the vegetables are soft.

4. Toss in the pineapple and cook for an extra 2 minutes.

5. Stir in the jasmine rice, chicken broth, soy sauce, grated ginger, salt, and pepper. Let it come to a boil.

6. Reduce the heat to low, cover the skillet, and let it simmer for 18-20 minutes, or until the rice is fully cooked.

7. Put the cooked chicken back into the skillet, mix everything well, and heat through.

8. Serve the dish garnished with sliced green onions and sesame seeds.
