Chop the Vegetables
Finely chop the green tomatoes, onions, and green bell peppers. -
Drain Excess Liquid
Place the chopped vegetables in a wire strainer and allow the extra liquid to drain thoroughly. -
Combine in Pot
Transfer the drained vegetables into a large stainless steel pot (avoid other metals, as the acid from tomatoes can react). A roaster pan can be used if stainless isn’t available. -
Add Seasonings & Vinegar
Add the apple cider vinegar, granulated sugar, mustard seed, and celery seed to the pot. Stir well to combine. -

Seal Jars
Place lids and bands on the jars and tighten. The jars will self-seal—no additional processing is necessary.
