Cook the Potatoes
In a skillet, heat the EVOO over medium heat. Add the cubed potatoes and cook until browned and cooked through. Remove them from the pan and set aside.

Brown the Beef
In the same skillet, add the ground beef, garlic, onions, and all the spices. Cook until the beef is browned and fully cooked.

Add Tomatoes and Serrano Chiles
Stir in the diced tomatoes and chopped Serrano chiles. Cook until the mixture thickens.

Combine and Simmer
Add the cooked potatoes back into the skillet. Simmer everything together for about 5 minutes to let the flavors meld.

Serve and Enjoy!
Delicious on its own or served with rice, tortillas, or crusty bread.
