Instructions
1. Preheat the Oven
Preheat your oven to 350°F (175°C). Lightly grease an 8×8 baking dish.
2. Beat the Egg Mixture
In a large bowl, whisk together:
5 eggs
½ cup sugar
1½ teaspoons vanilla
½ teaspoon salt
3. Heat the Milk
In a saucepan, heat 4 cups of milk to about 180°F, just before it simmers. Do not let it boil.
4. Temper the Eggs
Slowly pour a stream of hot milk into the egg mixture while whisking constantly to avoid curdling. Once combined, whisk for an additional minute.
5. Prepare for Baking
Pour the mixture into the prepared baking dish. Sprinkle nutmeg on top, if desired.
6. Create a Water Bath
Place the custard dish inside a larger baking pan. Fill the outer pan with hot water about 1 inch deep, avoiding splashes.
7. Bake
Bake for 45–50 minutes or until a knife inserted near the center comes out clean. The custard should still jiggle slightly—do not overbake.
8. Serve and Store
Let cool slightly before serving warm or chill for later. Delicious plain or topped with:
Whipped cream
Fresh fruit
A sprinkle of cinnamon or nutmeg
Refrigerate any leftovers.
