Easy Stuffed Pepper Casserole

Instructions

1. Brown the Meat & Sauté Veggies

In a large skillet, cook the ground beef over medium-high heat, breaking it apart as it browns. Once mostly cooked, add in the chopped bell peppers and onion. Cook for 5–10 minutes, until they begin to soften.

2. Add Aromatics

Stir in the minced garlic and cook for 1–2 minutes, just until fragrant.

3. Simmer the Mixture

Add the Worcestershire sauce, beef broth, diced tomatoes, uncooked rice, Italian seasoning, salt, and black pepper. Stir well. Bring the mixture to a boil, then cover, reduce heat to low, and simmer for about 20 minutes, stirring halfway through, until the rice is tender and the liquid is absorbed.

4. Add the Cheese

Once the rice is cooked, stir in half of the shredded mozzarella and cheddar until melted and incorporated. Sprinkle the remaining cheese over the top. Cover again until the cheese melts.
Optional: If your skillet is oven-safe, place it under the broiler for a few minutes to melt and brown the cheese.

5. Serve

Remove from heat and serve hot.

Enjoy this cozy and flavorful casserole with minimal cleanup!
