Creamy Chicken with Mushrooms and Red Peppers

Instructions

1. Cook the Chicken:

Cut the chicken breasts into strips or bite-sized pieces.

Heat 1 tbsp olive oil in a large skillet (preferably cast iron).

Brown the chicken over medium-high heat for 5–7 minutes until golden. Season with salt and pepper, then set aside.

2. Sauté the Vegetables:

In the same skillet, add more oil or butter if needed.

Sauté the onion and garlic for 2 minutes.

Add the mushrooms and red pepper. Cook for 5–7 minutes until the vegetables are tender and lightly golden.

3. Make the Sauce:

Return the chicken to the skillet with the vegetables.

Pour in the cream, add the mustard (if using), and sprinkle with paprika or herbs.

Stir well and simmer on low heat for 5–10 minutes until the sauce thickens and the chicken is cooked through.

4. Finish and Serve:

Adjust seasoning with salt and pepper to taste.

Garnish with chopped fresh parsley before serving.
