Creamy Chicken with Mushrooms and Red Peppers

Ingredients (serves 4):

4 chicken breasts

250 g button mushrooms (or forest mix), sliced

1 red bell pepper, finely diced

2 garlic cloves, minced

1 small onion (optional), thinly sliced

200 ml heavy cream (preferably full-fat)

1 tbsp mild or whole grain mustard (optional)

1 tsp paprika or Herbes de Provence

2 tbsp olive oil or butter

Salt and pepper to taste

Fresh parsley, chopped (for garnish)
