Carefully melt the chocolate in a double boiler until a smooth, glossy sauce forms.

Remove from heat and add the cold butter

Quickly add with a spatula

Pour the melted chocolate into a special silicone chocolate mold and fill it halfway; then place 1 whole roasted hazelnut into each cavity

Using a piping bag, cover the hazelnuts to the brim with melted chocolate.
The chocolate can be stored for up to 1 week at room temperature, in a tin and away from heat sources.
