Carrot fries with garlic and Parmesan, the side dish par excellence

Preparation:
Preheat oven to 200°C (400°F).
Slice the tops and bottoms of the carrots and peel them if desired.
Halve the carrots and cut each half lengthwise into thirds.
Place all the carrot sticks in a large bowl.
Pour all the other ingredients (except the dip ingredients) over the carrot sticks.
Mix well to coat the carrots with the seasonings and Parmesan cheese.

Spread the carrots on a baking sheet and arrange them in an even layer.
Bake for 15-20 minutes (depending on the case, for more or less crispy fries).
While the fries are cooking, prepare the dip. Combine all the dip ingredients in a small bowl and mix well.
Once the fries are cooked, let them cool on the baking sheet for 5 minutes before dividing them onto plates.
Sprinkle the carrots with additional Parmesan cheese and some chopped parsley, if desired.
Serve the carrot fries hot with the dip and a main course of your choice, or serve as an appetizer or starter.
