Cajun Corn On The Cob

1. Prep the Corn & Spice Rub

Preheat your oven to 425°F (220°C). In a small bowl, whisk together 2 tablespoons of olive oil, ½ of the Cajun spice, ½ of the smoked paprika, 1 teaspoon of garlic powder, 1 teaspoon of onion powder, and salt and pepper to taste.

2. Season & Bake

Place each ear of corn on its own piece of aluminum foil. Brush generously with the oil and spice mixture, coating all sides. Wrap each cob securely in the foil and bake for 30 minutes. For softer corn, bake an additional 20–25 minutes.

3. Prepare the Sauce

While the corn is baking, mix together in a medium bowl:

  • 4 tablespoons of mayonnaise

  • ⅓ cup sour cream

  • Remaining Cajun spice and smoked paprika

  • 1 tablespoon lime juice

  • Salt and pepper to taste

4. Finish the Corn

Once baked, unwrap the corn and let it cool slightly. Brush each cob generously with the prepared mayo sauce.

5. Garnish & Serve

Top each cob with ½ cup crumbled feta or cotija cheese and 1 tablespoon chopped cilantro. Sprinkle with optional chipotle or chili powder if desired. Serve warm.
