Beef Sausage Gravy with Buttermilk Biscuits

Directions:

1. Start by preparing the biscuits. Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper.
2. In a large bowl, whisk together the flour, baking powder, baking soda, and salt.
3. Cut in the cold butter using a pastry cutter or your fingers until the mixture resembles coarse crumbs.
4. Pour in the buttermilk and stir just until the dough comes together. Do not overmix.
5. Turn the dough out onto a floured surface, gently pat it to about 1-inch thickness, and fold it over itself 2-3 times. Flatten again to 1-inch thick.
