Ingredients

Meatloaf:

1½ lbs ground meat blend (beef, pork & veal)

1 caramelized onion (see Step 1)

1 egg

4 cloves garlic, minced

¼ cup fresh parsley, chopped

2 Tbsp fresh thyme, chopped

2 Tbsp milk

1 Tbsp Worcestershire sauce

¼ cup breadcrumbs

¼ cup Gruyère cheese, grated

½ tsp salt

¼ tsp black pepper

1 Tbsp olive oil (for onions)

Onion Gravy:

2 Tbsp butter

Reserved caramelized onions

3 Tbsp all-purpose flour

2 cups beef stock

2 Tbsp Worcestershire sauce

Salt & pepper, to taste

Topping & Garnish:

1 cup Gruyère cheese, grated

1 Tbsp parsley, chopped
